How pizza became known to all of Italy – San Marzano tomato sauce, fresh mozzarella fior di latte and the freshest organic basil. This one has all the basics, but delivers unbelievable and pure flavor – the pure zest of the tomatoes, the creamy texture of the fresh mozzarella blended with the hint of basil make this original come to life. Pair with a light red: Alfredo Prunotto Barbera Dasti Fiulot DOC or a medium bodied white: Antinori Orvieto Classico Campogrande 2005

What would a pizzeria be without an Italian sausage pie?! San Marzano tomato sauce, fresh mozzarella fior di latte, grated parmesan, and Italian sausage from our friends at Il Mondo Vecchio. The true American stand by – the classic Pepperoni Pizza. Our tangy San Marzano tomato sauce, fresh mozzarella fior di latte, grated parmesan and locally cured pepperoni Americana from Il Mondo Vecchio make this pizza sing with piquant flavor. We wouldn’t be a pizzeria without a white pie! White pizza with earthy garlic infused olive oil, zesty local goat cheese from Jumpin’ Good Goat Dairy, fresh mozzarella fior di latte and organic local Shiitake and button mushrooms from Hazel Dell (Featured in Denver Magazine, 100 things to taste, October 2010)
Pair this earthy pie with an equally earthy but light red: Louis Jadot Pinot Noir 2009 or a bold white: Simonnet-Febvre Chablis 2009
Pizza Bianca Fresca :: White Fresh Pizza ::
Another white pie, this one tho an opposite from its brother – very fresh – hence the name ‘fresh white’. Garlic infused olive oil, with local goat cheese, prosciutto and fresh fiore di latte fresh mozzarella – we bake this sucker off then top it with a fresh and crispy, lemon olive oil dressed arugula and parmesan shavings. Nice crispy but very fresh flavors from this one!
Skip the red for this one and go straight to a refreshing and crisp La Tunella Friuli Pinot Grigio 2009
